Who doesn't love pancakes?! Unfortunately, for many people with digestive issues, some of the ingredients in a standard pancake - like milk or flour - can aggravate the gut. Below are 3 pancake recipe ideas that are free from flour and dairy which should be much gentler on the digestive system. There is also a vegan option, so no need for eggs if you can't tolerate them either. Read on for instructions on how to make them.
Step #1: Pick a pancake recipe
Pick a pancake recipe from the 3 options below. To cook the pancakes (all options), melt a little coconut oil in a hot frying pan and fry on each side for about 60 seconds.
BANANA PANCAKES
1 medium banana, 2 eggs
Mash the banana and then mix the eggs in thoroughly.
OAT PANCAKES
40g oats, 1 egg, 8 tbsp unsweetened milk of your choice. Mix everything thoroughly.
VEGAN OAT PANCAKES
40g oats, 1 tbsp flaxseed mixed with 3 tbsp water and leave for 10 mins, 6 tbsp milk of your choice. Mix everything thoroughly.
Step #2: Choose a topping
Choose one of the following toppings to fit with your taste buds, and your gut!
CINNAMON YOGHURT
Mix 2 tbsp plain Greek yoghurt or with ½ tsp coconut palm sugar and ½ tsp cinnamon
BERRY CHIA JAM
Mash 2 handfuls of fresh or defrosted berries, mix in 1 tbsp chia seeds and leave for 10 minutes
NUT BUTTER
1 heaped tbsp of no added sugar nut butter
PICK A FRUIT
1 handful of berries, 2 chopped plums / apricots
1 chopped apple / pear / nectarine
And...enjoy!
These pancakes are super quick and easy to make, and are also great breakfast options.
